Scoville Heat Units (SHU) are a measurement of the spiciness or heat chili peppers and other spicy foods. Developed by pharmacist Wilbur Scoville in 1912, this scale quantifies the pungency based on the concentration of capsaicin, the compound responsible for the heat sensation. The higher the SHU, the hotter the pepper! For example, a bell pepper has a SHU of 0, while a Carolina Reaper can reach up to 2,000,000 SHU.
